Creamy Hot Chocolate (Dairy Free)
Each Christmas we have a tradition to watch The Polar Express, and we pause while everyone gets a steaming mug of hot chocolate for the very fun tran car scene where the waiters dance-deliver hot chocolate to the children. It is foot tapping time, and yes, I sing and sometimes dance!
Since dairy creates sinus issues for my son and myself, not to mention aches and pains....dairy free hot chocolate has been our change in this tradition these past several years. For 2016 a friend posted a Creamy Hot Chocolate recipe, and it contained lots of dairy and sugars...I realized that adding creaminess to hot chocolate is easy with canned coconut milk.
We are going to enjoy this and I hope you try it too...a picture will be taken on Christmas day.
In a large pot, warm the following:
1 carton Silk brand Dark Chocolate Almond milk
Thai canned coconut milk - use only the thick separated portion
1 tsp. pure vanilla extract
Warm until steaming, serve with a cinnamon or peppermint stick
Silk Almond Dark Chocolate Milk is very rich, but if desired, you may add Enjoy Life chocolate chips.
