Tropical Guacamole

Ingredients:
2 avocados, sliced in half -use large spoon to remove the flesh and
½ cup finely chopped pineapple
½ cup finely chopped mango
¼ cup chopped, fresh cilantro
1/8 cup chopped green onions
2 T. coconut milk, thick from the can
1 T. freshly squeezed lime juice*
Use the spoon to coarsely chop the avocado flesh and place into a bowl with the fruit and greens. Add the coconut cream, and lime juice. Gently blend. Serve immediately. (Consider serving with gluten free quinoa crackers or organic corn tortilla chips.)
*substitute: 2 drops therapeutic grade lime essential oil
