Lemon Chicken Pepper Saute
Ingredients:
Avocado oil
Turmeric – ½ tsp. sprinkled over oil in pan
2 organic chicken breasts, sliced ¾” thick and again into bite sized pieces
½ Lemon
Place oil and turmeric in skillet on medium heat. Once warmed up add chicken, and cook thoroughly.Once par-cooked squeeze juice of half lemon over top.
Add to skillet:
1 small yellow onion, chopped.
Lemon thyme (fresh or dried – use regular (Thymus vulgaris) if lemon is not available. (Approx. 1 tsp.)
Toss with tongs. Reduce heat.
Add cracked black pepper to taste.
Add Peppers:
2 organic bell peppers – yellow and orange, sliced thin
Add peppers to small bowl. Add 1 T. avocado oil and use tongs (or hands) to toss and coat.
Add to pan and simmer.
Continue to stir. Allow onions to caramelize.
8 minutes before serving add ¼ cup chopped green onion. Serve immediately.
End of summer tip: bring your pot of thyme indoors as it thrives easily as a houseplant. Trim leaves from potted lemon grass approximately three inches above soil. Spread lint free dish cloth on table and allow lemon grass to air dry in shallow layer. Trim into ½ to 1” pieces and store in mason jars. Use for lemongrass tea, or in recipes featuring lemon flavors.
