Gingered Tropics Slaw
1 small head of ogranic green or purple cabbage, finely chopped (about 6 cups)
1 large organic apple, diced
1 mango, peeled, diced
Vidalia or sweet onion, 1/4 c. finely chopped
1/2 c. raw pumpin seeds
Chia seed for garnish
Dressing: - mix all together in a shaker cup or blender
1/4 c. organic extra virgin olive oil
1/2 c. Braggs Apple Cider Vingear
1/4 c. Coconut aminos
1/2 tsp. Herbamare seasoning
1.4 tsp. Frontier organic turmeric root powder
1/4 tsp. Simply Organic Ginger Root powder
1 T. raw honey or substute liquid Stevia
Add slaw ingredients to large bowl. Drizzle dressing over cabbage mixture, just enough to lightly toss and coat cabbage. Let sit at least 30 minutes prior to serving. Serve in individual bowls, sprinkling black chia seeds on top for garnish if desired.
Tip: when choosing mango at the grocery store, select fruit that is about 40/60 or 50/50 green and red. This usually yields a fruit that can be peeled with a potato peeler, and is firm, yet juicy and sweet.
