Holy Gaucamole
1 avocado, dark
and flesh gives when pressed
1 small onion, chopped fine
3 cloves garlic, minced or pressed
1/2 tsp. turmeric spice
2 T. extra virgin olive oil
3/4 tsp. chipotle seasoning*
2 tsp. freshly squeezed lime juice
Directions:
Saute garlic and onion in EVOO and turmeric. Set aside to cool.
Slice avocado in half lengthwise, twist to separate halves. Scoop out avocado, tossing pit. Use spoon to chop or mash avocado until desired consistency. Add in garlic/onion mixture and chipotle seasoning to desired heat preference. Mix in squeezed lime juice. Serve with organic, GMO-free, gluten-free tortilla chips.
*May use Pampered Chef (Gluten Free) Chipotle Seasoning or make from scratch below.
Homemade Chipotle Seasoning:
2 tablespoons ground dried chipotle pepper
1 tablespoon paprika
1 tablespoon dry mustard powder
1 tablespoon ground cumin
2 tsp. finely ground Celtic salt
This HEALTHY SNACK offers Omega-3 from the avocado, and cancer fighting anti-oxidants from the onion, garlic and turmeric. Excellent as a sandwich spread!
Make it a Meal!
Add 2 cups bite sized (or shredded), cooked cooked chicken to guacamole. Serve in a gluten free wrap with spinach greens, tomato and cucumber slices for a satisfying meal. When tomoato and avocado are combined, they create a food syngery that helps to reduce cancer risks. Lycopene, a carotenoid from tomato, is made more bio available to the body when consumed with a healthy fat, such as avocado. Another idea is to always drizzle extra virgin olive oil over your tomatoes before eating!
