Protein Snack Bars
Vanilla Nutrageous Bars by Rita Shimniok
In a microwave or oven safe dish combine:
2 c. organic almond butter
1 3/4 cup raw honey (start with 1 1/4 c. and add if needed to pull dry ingredients together)
1 T freshly squeezed orange juice (optional)
Place in toaster or conventional oven on low heat of 225 for 15-20 min., or microwave (see below)
Mix following dry ingredients in large bowl:
3 cups organic rolled outs
1 cup steel cut oats
3 scoops daily essentials soy-free vegan vanilla protein powder
1 scoop clean fiber powder - the brand used is non-grainy and tasteless
1 T (heaping is good!) good quality cinnamon
1/2-1 cup finely chopped nuts (I used approx. 1/2 cup each cashews and pecans)
3/4 c. sliced almonds, set aside
In microwave safe dish measure out almond butter and liquid sweetener - warm for about a minute on 3/4 power to create a more liquid consistency. Stir in orange juice if desired. Pour into bowl of dry ingredients using sturdy wooden spoon to stir and blend until well mixed. Set mixture into a stoneware pan or glass dish, and use spoon to flatten out in pan. Pat sliced almonds on-the-go snack or meal.
NO MICROWAVE - NO PROBLEM! We don't use a mcirowave. Instead, we used a stovetop safe ceramic Dutch oven on the stove top and on low heat stir all liquid ingredients until smooth and fluid, then added the dry ingredients.

2 T. juice from ½ orange (at room temperature)
2 c. organic quinoa (uncooked)
4 scoops daily essentials soy-free vegan vanilla protein powder
2 scoops essentials fiber powder
1 ½ c. dried organic blueberries (or cranberries)
½ c. golden flaxseed
1 c. chia seed
1 c. pecan chopped pecan meats
1 c. walnuts – finely chopped (processed, almost like nut flour)
1 T. cinnamon
¾ c. raw honey
1 c. sliced almonds
In large mixing bowl place contents of almond butter jar (note: this is much easier if you prep the jar by tipping it upside down, back and forth 3-4 times the prior day as the separated oil will automatically mix), and orange juice, stir well.
In separate bowl stir dry ingredients together and add into almond butter mixture, stirring with sturdy wooden spoon until blended. Add in agave nectar, as needed, until mixture is well blended and sticks together well. Place into a large bar pan, and use spoon to flatten mixture out into bar pan. Cover and let refrigerate a couple hours before cutting into bars. Bars may be placed into snack bags for on the go snacking. Keeps well in refrigerator for a month (if they last that long!), and can also be frozen.

Kid’s Delight PB n Chocolate Bars

1 scoop essentials fiber powder
2 c. peanut halves
1 c. Enjoy Life semi sweet chocolate chips
½ c. Enjoy Life dark chocolate chips (optional)
1 c. raw honey
When shopping for chocolate read labels and find chips with least amount of additives. Check a health food store – beware of high fructose corn syrup and artificial this or that!
In large metal mixing bowl place contents of peanut butter jar, stir if needed with wooden spoon until creamy.
In separate bowl stir first three dry ingredients. Stir into peanut butter. When well blended add in peanuts, chocolate chips and honey. Blend well and place onto large bar pan – flatten out with wooden spoon. Chill thoroughly before cutting in to bars.
These bars received rave reviews from our children. They are no bake - pretty simple to make..
Package individually in snack size zip lock baggies for school snacks or snacks on the go. Store in freezer and take along to those summer kid's sport practices, which are thawed and perfect for an after practice/game snack.
