Sweet Beet Smoothie
Late summer....beets are fresh from the garden! Well known by in the world of functional medicine to have many healing benefits, beets fortify the blood and help cleanse it of toxins. Herb roasted beets are a favorite cooked beet recipe, but eating them raw is the very best way to get the nutrients.
This Sweet Beet Smoothie is just the right consistency and will provide a full morning or afternoon of fortification, and reduce those cravings.
Fresh from our organic garden...check out what I found to put in today's gorgeous green smoothie blend!
- 1 beet root
- 2 beet tops
- 2 kale tops
- handful of Cleaver weed (yeah, cool weather find!)
- 2 oranges, peeled, but leave the white pith
- 1 organic apple
- 1 scoop Protein Boost
- 1 scoop Fiber Boost
- 1 cup of ice

A tip on using beet roots - if you do not have a real powerful blender, but wish to use them raw, simply let fresh beets sit a week in your refrigerator. The root will naturally loose its hard, dense property and become easy to blend. I use the green tops, but cut off the root and the top of the root as it can be more challenging to wash the dirt off.
To feel full - aka satiated to prevent cravings - the combination of complex carbs, protein and fiber are key. Enjoy this nutrient dense smoothie made with the benefits of sweet beets!
