Vegan Ranch Dressing (Soy Free)
The inspiration for this dressing came from the Rawtarian - a great site to scope out raw food recipes.
I love simple, and my Ninja IQ does make life easier when eating raw. If you have a great blender this should blend up smooth and creamy. A tip is to soak the cashews for a period of time before blending to help your blender work more efficiently.
Ingredients
· 1 1/4 cups cashews – soak cashew for an hour prior
· 3/4 cup water (or a little more)
· 3 tablespoons lemon juice
· 1/4 cup apple cider vinegar
· 1/3 cup organic extra virgin olive oil
· 3 tablespoons raw honey
· 2 cloves fresh garlic
· 1 thin slice onion or 2 T. minced onion
· 1 teaspoon dried dill or tablespoon of fresh, chopped
· 1 teaspoon fine grain Celtic or Himalayan sea salt
Throw it all into a blender and blend away until smooth. Easy and delicious!
