Quinoa Vegi Blend - Hot Dish
Quinoa Vegi Blend
In rice cooker or on stove top:
1 ¾ water or organic vegetable broth
1 1/2 cups brown quinoa*
½ c red quinoa*
Set rice cooker for white rice setting
On stovetop:
1 T. organic coconut oil, melted
Cook on low heat for 5 minutes in ceramic coated pan:
· 4 organic fresh cloves of garlic, minced
· 1 inch ginger root, peeled and minced
· ¼ tsp. organic ground turmeric root
Use food processor or finely chop next three ingredients:
½ large onion chopped fine
2 organic carrots
6-8 spears fresh broccoli
Sauté’ all vegetables on stovetop until tender, medium low heat approximately 20 minutes. Turn temperature to low.
Add in:
½ tsp. Herbamare seasoning
1 tsp. Coconut Aminos
Once quinoa is done, blend ingredients together and allow flavors to marry for ten minutes. Serve.
*May use only one type of quinoa.
Meals in Minutes - add cooked chicken or turkey for a one dish meal!
