Sweet Potato Delish
This sweet potato dish was a hit at the Christmas eve gathering, even for those who are not fond of this golden, vitamin rich potato. A dessert like flavor, set the chemical laden marshmallows aside and brown sugar. This delicious dish is proof that traditional holiday dishes can be made both healthy and delicious. For a completely low glycemic option, see the note at the bottom for a maple syrup substitute that is not only low glycemic, but has health benefis of boosting metabolism - and who doesn't need that during the holidays?
Use a 9x13 glass baking dish. Coat bottom and sides with coconut oil.
Ingredients:
5 organic sweet potatoes peeled, sliced into ¼ thick wheels
Coconut oil
½ c Thai brand coconut milk from the can (thick)
2 tsp. cinnamon
2 T Wholesome organic coconut palm sugar
¾ pure maple syrup
1 tsp. vanilla extract
Option: coarsely chop pecans for topping
Peel potatoes and place into a large bowl. Drizzle melted coconut oil over all and toss with hands to coat the potato wheels, or cover bowl with lid and shake to distribute oil.
In a blender, or with a whisk, blend coconut milk cream, cinnamon, coconut palm sugar, vanilla and maple syrup. Pour over potatoes and bake at 350, uncovered, for 50 minutes or until fork pokes through potato wheels easily.
Ensuring no nut allergies, pecans may be sprinkled over the top. Remove from oven 10 minutes prior to the time and add nuts so they are lightly toasted in the oven.
