 The coveted mashed potato for the Thanksgiving meal - personally, give me another helping of mashed potatoes and skip the pie! Do you feel the same?
I used to feel guilty about eating mashed potatoes at the holidays and felt I should stick with the yams. Depending on how the orange potatoes are dressed, they could be even worse for my health!

I let go of the guilt and I hope this share today helps you do the same if you struggle with food guilt. Now, I am not saying that if you have a potato allergy you should dive in, but for those of us who have a healthy mindset around food in general, I am declaring that some indulgences during the holidays is not only freeing, it's good for your mental health. Shame and guilt are never a good thing...

I want to share with you a twist on the typical mashed spud, and also share some information that can scientifically reduce your guilt. Let's start there...potato starch may have gotten a bad rap. Just as butter was given a bad rap and margarine was ushered in, which in reality ended up being detrimental to the global population as the nasty unsaturated fat, chemical-laden margarine caused arteries to clog and heart disease to rise. If you are still on the artificial butter bandwagon I encourage you to really dig in...and read "Good Fats, Bad Fats" by Gary Taubes.

I digress...about the spud...the starch was reported to be our enemy. But is it?  Per this article from the Mastering Diabetes organization, the insulin issue may be more about food combination. A person who is eating a higher fat diet might have more of a reaction to the white spud than others.  It is the fat/potato combo that makes potatoes potentially hazardous to one's health - which is why the French fry is one of the most, if not in the top 3, of unhealthy food choices. The mention of unsaturated fat above...it is important. Because it is the canola and vegetable oils that are the artery-clogging kind, and this is often used to fry potatoes. The combination spikes insulin and produces acrylamides, which is a carcinogenic chemical.

The Atkins Diet generated an all out war on carbs - no matter what kind, simple or complex. But carbs are absolutely necessary for your body to function. Again, please review this well done article  which explains the benefits of the potato starch. The average medium white or red potato has a value of 27 carbs, whereas sweet potato has 37. Not all potatoes are alike. Fingerlings are reported to have the least amount of starch, and baking potatoes have the most, with a glycemic index of 87, which is what makes them fluff up so nicely when split open after baking. Generally speaking the smaller the potato the lower its glycemic index. This article ranks potatoes by how healthy they are and explains the vitamin and mineral content of various potatoes.

Embracing mashed potatoes - let's dirty them up!  
I love mashing my potatoes with organic, unsweetened almond milk.  First, I saute garlic and caramelize onions in avocado oil if vegan - or use a combination of bacon fat and ghee for even greater flavor. These three foods: almond milk, garlic, and caramelized onion are added to a blender or food processor to puree. I  don't care for watery potatoes - so I mash my potatoes with a good ol' fashioned hand masher, and fold in the delicious puree. Personally, I add in additional ghee, but if you are vegan can skip this.  If there is no concern for fat content - you can even fold organic full fat sour cream and perhaps even asiago shredded cheese to your potato mash. Once you have the desired flavor, place the mashed potatoes into a baking dish and place in a 350 degree oven for 15-20 minutes to create a lightly golden crust on the potatoes. Have you heard the term "foodgasm"? Yeah, this is a great description for your first bite of these amazing mashed potatoes!

Don't be guilted or shamed when you enjoy your holiday celebrations. Food is to be enjoyed, praised and given thanks for providing beneficial nutrients for life.

Yesterday, November 4, I awoke at 1:05 p.m. I felt like I was emerging from a hole in the basement, “do we have a president, yet?”  I had no idea. You see, I began getting a headache on election night around9 p.m. It was growing in its intensity and by 10:30 p.m. I just had to call it quits and go to bed.  I did not sleep well, my stomach rumbled. I realized if this was a migraine it was one of those nasty nauseating ones I’ve heard about. I will spare you the details. The big question for me is, “why did I get sick – I don’t do sick and honestly cannot remember the last time I was sick.
I missed my daily devotional, Jesus Calling. For 11/4 it opens with “Walk peacefully with me through this day…”  My head hurt too much to even consider laptop or social media. I missed an on-line  zoom meeting. What peace! I had an update from my children on the election and prayed for peace and restored health to wash over me, and for peace, love and righteousness to be restored to our country.  “When you don’t know what to do, wait while I open the way before you. Trust that I know what I am doing, and be ready to follow My lead. I will give strength to you, and I will bless you with Peace.”

I had several revelations while lying in bed. In my efforts to share my awoke-ness with others on Facebook a lot of “bad fruit” surfaced.  Hate, darkness, evil…one woman who commented several times, by the third comment I had a vision of the demons coming out of her, like the scene in “Ghost”. That was a bit scary, and I immediately  unfriended her.

I don’t get sick. I have been on such a high as of late for what God is doing in my life and amongst those I meet…I have felt like light beams were just shooting out of me, at times even giddy. I felt like no darkness could overcome my light…but I had too much faith in myself. Despite prayers for my usual protective God-bubble that one evil person did manage to break through. Sickness comes from bad energy –and I allowed too much of it to go unchecked on Sunday via the ever-growing darkness that is on Facebook. 

Today I declare a cleansing of darkness from my space. There have been those who have exuded dark energy. I am not talking about differences of opinions. There are those who are fully able to express disagreements in kindness and love. I have always had a pretty good gift of discernment, and I am calling upon it to guide me in unfriending those who zap my good and bright light. They are takers, not givers. Each of us has the ability to choose. We make choices between right and wrong, good and evil, and whom we choose to hang out with. I am choosing light, and letting go of darkness. It may take me a few days, unless I can find that list I started on Sunday…  I will release each with a prayer that God's love will overcome the the hate that has settled in their hearts.

Yes, hate is a strong word. I recognize it because years ago I harbored such a sentiment for a man who had wronged me as a child. All the letter writing and releasing it into flame did not dispel the darkness from my heart.  a few years ago, perhaps 2012 or so,  Pastor Chris Dolson, then senior pastor at Blackhawk, gave a talk on love, or maybe it was hate. Or both. He said that to live according to God's will we are to never hate a person, another human beeing. A mentor of mine, may she rest in peace, used to say, "Love the sinner, hate the sin." Sin is what separates us from God, and hate is indeed a sin. I've had my share of people I probably should "hate"  for wrongs done to me. But I experience good energy when I pray for their souls to come to the light in repentence, so that they may dwell in the house of the Lord forever. When I do this, the light in my heart burns brighter and casts out the shadows that hide in the corners. The shadows of darkness that drain my energy and cause emotional distress.

I choose to hang-around Light-Workers and through this darkness period of covid several beautiful sisters and brothers of the Light have emerged, and I am blessed by their presence in my life. Today’s Jesus Calling devotional ends with, “People…pour their energy into trying to control situations. They feel happy when things are going well or sad and frustrated when things don’t turn out as they hoped. They rarely question this correlation between their circumstances and feelings. Yet it IS possible to be content in any and every situation. Put more energy into trusting Me and enjoying My presence. I am with you and will watch over you…I will meet your needs according to My glorious riches. Nothing in all creation will separate you from My Love.” Romans 8:38-39

Satan tries to separate us from God. The prince of darkness is alive and well in our land, and his demons are at work all around us. Physically active, verbally abusive…beware. If you walk in the Light ask the one true God, the Creator of All, who loves all…to be your guiding light as you go about your day and decide whom you will allow in to your space. Protect it with the armor of God.

Is your energy being zapped by the dark energy of others? You have the right to protect your own space.
