Which brings us to the topic of sources...and as you may already know, fish are transporters of mercury toxins when we eat them. We truly are what we eat. The larger the fish ...the more mercury they are likely to have. In the States, swordfish has become quite popular, and it is one of the most toxic of fish species. But let's consider the ever popular tuna - often used in casseroles and salads. For many children, tuna is their first introduction to eating fish. Tuna is also large, and contains mercury. A while back I did my research, and discovered that White Planet Tuna is the least toxic of the brands available...definitely avoid that "Chicken of the Sea" - sorry Charlie!
One of my favorite recipes using tuna was posted a while back, a gluten free pasta salad with an amazing avocado dressing. I happen to have tomatillos in my refrigerator that need to get used...and this recipe contains this unusual fruit, or is it a vegetable? As coinslder weather ensues, you might even consider turning the recipe into a hot casserole version, as it would be fairly easy to adapt.
Consider SAFE FISH. According to Dr. Group sardines and anchovies contain no mercury – eat as much as you wish! My friends over at Jenreviews.com offer a recipe for grilled sardines on rustic toast. For a bread selection may I suggest a whole grain sourdough (quinoa sourdough is a great gluten-free option, albeit somewhat difficult to find). For a non-GMO option consider einkorn bread. Recently I purchased einkorn flour from Jovial and plan to make an einkorn sourdough this winter to go with our soups.

Fish is an easy to digest protein. I encourage you not to fear fish due to mercury, but be smart. Eat smaller fish with less or no mercury. If you enjoy the larger fish, do your own dilgence and eat cilantro, drink cilantro water (simply blend with filtered water and strain - it is delicious!), drink stinging nettle tea, or follow Dr. Group's other recommendations to hep your body detox from heavy metals.
